Recipe of kheer: 

Today I will cook tasty kheer.  It is very healthy and yummy.  

Ingredients:


1-liter whole milk

1/2 cup basmati or good quality  rice, washed and soaked for 30 minutes

1/2 cup sugar (adjust to taste)

4-5 green cardamom pods, lightly crushed

2-3 tablespoons sliced almonds and pistachios

1 tablespoon raisins

1/4 teaspoon saffron (optional)

1 tablespoon ghee (clarified butter)

Instructions:

In a large pot add the milk to a boil. 


Add the soaked rice to the milk and stir well. Reduce the heat to medium-low and cook for 30-35 minutes, stirring occasionally to prevent the rice from sticking to the bottom of the pot.


Add the sugar and cardamom pods, and stir well until the sugar has dissolved. Continue to cook for another 10-15 minutes, or until the rice is completely cooked and the kheer has thickened to your desired consistency.


Add the sliced almonds, pistachios, raisins, and saffron (if using) to the kheer and stir well. Cook for another 2-3 minutes.


In a separate pan, heat the ghee and fry the remaining sliced almonds and pistachios until they are lightly golden. Put this to the kheer and stir well.


Put off the kheer from the stove and let it cool for a few minutes.


Serve warm or chilled, garnished with additional nuts if desired.
